Baking with Grammy

      Today whilst Mommy and Noah were processing chickens, the other ladies baked a few things with Grammy. What a fun time we had!
We love cooking with Grammy because we can learn so much from her. We love it!!

       For any of you who don’t know what a Swedish tea ring is, I thought I would try to describe it.
Well, it is kind of like a cinnamon roll in the shape of a big ring that is cut and laid over to make 
it more beautiful. It was a tradition in Daddy’s family to have these and orange rolls for Christmas morning 
breakfast. We carry on the tradition but instead of a Swedish tea ring and orange rolls we have cinnamon and 
orange rolls. I also thought that you might want the recipe so that you could try it. Have fun!

Swedish Tea Ring

2 cups milk          2 packages instant yeast      6 to 7 cups sifted flour     margarine or butter
½  cup sugar       2 eggs                                 cinnamon sugar
2 tsp. salt            ½ cup shortening                 raisins

                Heat milk to lukewarm and add sugar and salt while on the stove. Stir until dissolved.  Pore into big bowl. Quickly add yeast and stir until dissolved. Stir in eggs and shortening (shortening will not really mix, just  mash into pieces).Then add flour and mix.  Knead for a 4-5 min. or until it is not very sticky anymore (it kind of feels alive because it springs back when you push it in). Grease the bowl (the same one you  mixed in, its OK if it has some dough on the sides) with shortening. Place dough in bowl then flip over so there is some shortening on the top, this keeps it from drying out.  Let rise for 1 ½ hours, punch down, then let rise 30 min. Punch down again. Then take half of the dough and roll out into a rectangle. Spread on butter then sprinkle on cinnamon sugar then add some raisins. Roll up long ways and pinch together. Grease pan and pick up both end and lay on pan in a ring shape and pinch together the ends. Now with a knife cut three fourths the way into the ring, do this all the way around the ring. Now take each of the slices and lay them over like dominos. Let rise until it is a pretty good size. Do the same thing with the other half of the dough. Then bake at 375 for 25 to 30 min. If it begins to get to dark, cover with foil for the rest of the time. The icing is just powdered sugar, milk, and vanilla (not a lot). Add the milk to the powdered sugar until it is the right consistency. Put about 1-1 ½ teaspoons of vanilla, not to much.  You can heat it in the microwave for a few seconds so it will pore better. This recipe makes 2 rings. Hope you understand!  Enjoy!

Chicken Harvesting Day

In an earlier post we told you about our attempt to raise Pastured Poultry. During the process of raising them we lost some to accidents. Over sixty of the original 100 chickens lived to maturity (eight weeks). With plastic jugs for killing cones, a turkey broiler for a scalder, a stainless steel table, and a homemade automatic Chicken plucker, we set up a ‘disassembly line’. It took two days to finish the chickens, and we think we will be able to do it faster next time.

Scalding requires constantly dipping the chickens in 145 degree water to loosen the feathers.

Turn the plucker on, throw the chickens in, and thirty seconds later they should be finished.

Mommy ‘eviscerating’ a chicken. That means she was removing all the parts you don’t want to eat. She did a great job and got pretty fast!
